Ingredients

  • 1 ½ cups all-purpose flour
  • 3 ½ teaspoons baking powder
  • 1 tablespoon sugar
  • ¼ teaspoon salt
  • 1 ¼ cups milk
  • 1 egg
  • 3 tablespoons butter, melted
  • 1 teaspoon vanilla extract (optional)

Directions

  1. Mix Dry Ingredients:
    In a large bowl, whisk together flour, baking powder, sugar, and salt until combined.
  2. Add Wet Ingredients:
    Make a well in the center of the dry ingredients. Pour in the milk, egg, melted butter, and vanilla extract (if using). Stir just until combined — small lumps are okay.
  3. Heat the Pan:
    Heat a lightly oiled griddle or non-stick skillet over medium heat. You’ll know it’s ready when a few drops of water sizzle and evaporate on contact.
  4. Pour and Cook:
    Pour about ¼ cup of batter per pancake onto the griddle. Cook until bubbles form on the surface and edges look set, about 2–3 minutes. Flip and cook another 1–2 minutes until golden brown.
  5. Serve Warm:
    Stack your pancakes, top with butter and syrup, and enjoy immediately.

  • For extra fluffy pancakes, don’t overmix the batter — stir until ingredients are just incorporated.
  • To keep pancakes warm while cooking the rest, place them on a baking sheet in a 200°F (93°C) oven.
  • Substitute half the flour with whole wheat flour for a healthier twist.
